Watershed is the best one to start with. It captures both their mellow and aggressive sides perfectly. The death growls Still Life and Ghost Reveries are slightly more important, but the clean vocals on those albums are still dominant. My Arms Your Hears, Blackwater Park, and Deliverance are the heaviest ones. The first two albums, Orchid and Morningrise, respectively, are more black metal-ish and have fewer clean vocals than usual. Damnation is pretty much all quiet songs.
If you like Mikael Akerfeldt's death growl, check out his side band, Bloodbath. Completely different from Opeth. No clean vocals, almost no acoustic guitars, shorter and faster songs, just straight-up death metal.
