Speaking of foodie...

Had the yen in the last couple of days to try out a certain someone's warm avocado pasta winking smiley

It was surprisingly good though it looks like shit when all mixed up. And it wasn't just me either who thought so. Global praise all-round for the dish.

Maybe he will save the world, after all [smirk]

As per requested on twitter, here's the recipe:

(note please keep in mind this is a hack! based on the conversations online with the originator of said avocadoness)

• boil pasta ( i used penne ), while cooking to al dente...

• sautee thinly sliced / finely minced garlic in olive oil. medium low heat. don't let it go brown! i used 3 fat fresh cloves but then again i looooove garlic!

• take garlic and smash into the avocado until you got a paste

• mash in fat-free cottage cheese. I used 3/5th avocado to 2/5th cottage cheese.

warning: it will look lumpy. it may look like mold gone very wrong, based on your own kitchen lighting conditions.

• add salt & pepper to taste. white pepper if you don't like the look of black pepper marring the lovely green-neess. black pepper if you really don't give a fuck.

• drain pasta. reserve some of the liquid to loosen up the sauce.

• carefully mix in avocado-and-cottage-cheese sauce into penne.

use some of the cooking water if you find it too thick-ish (too much sauce, not enough pasta). that never seems to be a problem in my household though, but...

don't smash in the sauce or you'll break down the pasta!

• add salt and pepper to taste. i love lots of salt. others find my salt fetish weird.

that's it. like i said, a hack.

The best things in my kitchen are my knives (shit knives certainly *can* destroy a good dish) and my Calaphon simmer pot. Planning on getting more Calaphon as I can afford it, but that's expensive shit.

Must have ingredients are fresh basil and rosemary, a black pepper mill, sea or kosher salt, good olive oil. My staples are pasta, flatbreads, hummus (my favorite quick lunch), and good sandwich ingredients. I also love making sushi, but it's a bit of an ordeal and requires more forethought than I'm used to. I love asian food, but I don't make it much - can't be good at everything. Italian and your standard american fare (good steaks, grilled chicken, salads) is 90% of my cooking.

What is your comfort dish? Can't really say. Depends on my mood. The only time I think about food is when I'm hungry. When I'm hungry, I need to eat something fast and usually don't have the patience to prepare my own food, so I just grab something from the fridge. However, I do enjoy cooking sometimes and make my own recipes. When I lack a certain product, creativity gets involved. Here's an easy salad I fancy:

Boiled potatoes, boiled carrots, pickles, one boiled egg, ham, some mushrooms, peas. (the quantity of each ingredient depends on your own assessment) Dressing: some mayo or whatever you like, you can mix a couple of ingredients or use a ready made sauce. Mix all that shit together and you have a Godzilla salad.

What is the must-have ingredient in your kitchen? Bread. I'm a sandwich person.

What is something you will never ever EVER try? Hmm, I cannot think of something I'd hate without trying it first. Tried but will never taste again: Bananas, melons, strawberries, raspberries, blackberries, avocado, parsley, dill (basically most of that green shit), anything mint-flavoured (except mint tea- I loves it).

and your post reminded me that i have some fresh blueberries that need to be eaten ASAP! just need to make a nice buttery crumb pie shell and we're golden, so to speak winking smiley

i love blueberry pie but have never had it with melted cheddar. i will try it sometime.

raspberry sorbet is also something I forgot to put on my list of favorite food.
